Glazed Carrots with Cider


This recipe makes a sweet side of carrots. I found the original recipe in "the best-ever vegetarian cookbook." It is gluten-free and contains no preservatives.



  1. melt butter in frying pan
  2. add carrots and saute for 5 minutes
  3. sprinkle in brown sugar and cook for one minute or until disolved
  4. Add cider and stock or water, bring to a boil and stir in mustard
  5. partially cover and simmer for 10-12 minutes
  6. remove the lid and cook until reduced to thick sauce
