Glazed Carrots with Cider
Description
This recipe makes a sweet side of carrots. I found the original recipe in "the best-ever vegetarian cookbook." It is gluten-free and contains no preservatives.
Ingredients
- 1 pound of medium carrots, peeled and sliced into julienne strips
- 2 Tbsp butter
- 1 Tbsp dark brown sugar
- 1/2 cup apple cider
- 4 Tbsp of vegetable stock or water
- 1 tsp dijon mustard (I substitute 1/2 tsp black mustard seeds)
Method
- melt butter in frying pan
- add carrots and saute for 5 minutes
- sprinkle in brown sugar and cook for one minute or until disolved
- Add cider and stock or water, bring to a boil and stir in mustard
- partially cover and simmer for 10-12 minutes
- remove the lid and cook until reduced to thick sauce
